    With the Terlingua International Chili Championship kicking off this week, I thought I'd share dad's trophy chili recipe.

    He always wanted to enter into the Terlingua Chili Championship, but said they wouldn't accept his application because they couldn't stand the competition!  That, or they'd eat it all before he could get it to the judging table!

    LT’s Red Stag Chili

    2 lbs. red stag chili meat
    ¼ C. Crisco
    1 yellow onion, chopped
    1 red onion, chopped
    4 jalapenos, diced
    8 cloves garlic, minced
    1 10 oz. can tomato soup
    1 soup can (10 oz) of beef broth
    1 12 oz. bottle of Shiner Bock
    2 t. cumin
    2 t. salt
    ½ t. black pepper
    ½ t. red cayenne pepper
    2 t. paprika
    2 T. chili powder
    2 t. brown sugar
    1 lb. sliced mushrooms

    Saute onions, jalapenos and garlic in ¼ cup Crisco. Add chili meat and brown while stirring occasionally. Add liquid & dry ingredients to browned meat, stirring well. Add mushrooms and beer and simmer 2 ½ hours. Taste & adjust seasonings, if needed, prior to serving.
    Can substitute other kinds of game.

    One time Doug invited me over for a Fall Lunch, I had some of his famous chili, his quote to me that day :
    “Come on in here son, get ye some of this chili, it’ll take the hair off your chest " ! I miss this fun loving, full of life Man !

    Thanks for sharing that with us Tony – we miss him too… and again, thank you for the wonderful job you did speaking at Dad’s memorial. We are still chuckling at some of y’all’s mischievous antidotes!
